Mexicali Margarita

Yields One Cocktail

Ingredients

¼ cup el Bastón del Rey Reposado Tequila

½ oz fresh lime juice

¼ cup fresh orange juice

1/8 tsp agave nectar

1 TBSP chopped Fresno chile, no seeds or stems

Garnish

lime wedge

muddle stick, martini shaker & ice

Method

Place your chopped Fresno chile into martini shaker and using muddler press down on the chile pieces to release the oils and heat. Then add the ice cubes and remaining liquid ingredients into the shaker and shake wildly and pour into rocks/lowball glass. Garnish with lime wedge.

Tequila Syrup for
Pancakes & French Toast

Yields ½ cup

Ingredients

1⁄2 cup piloncillo or brown sugar

1⁄4 tsp ground cinnamon

1⁄4 cup tap water

1⁄4 tsp ground star anise or ground allspice

1⁄4 tsp ground nutmeg

1⁄4 cup el Bastón del Rey Extra Anejo Tequila

Method

Place all ingredients into small saucepan and heat while whisking over medium heat for about 5 minutes. Remove from heat and let cool. Serve as desired.

Mexican Butter Cookies

Yields 24 each, 2-inch round cookies

 
 

Ingredients

1⁄2 cup butter, room temp

5 oz granulated sugar (by measuring cup)

1⁄4 tsp Mexican vanilla extract

2 egg yolks from large eggs

1 1⁄4 cups all-purpose flour

1⁄2 tsp kosher salt

1⁄4 tsp baking powder

digital scale

1⁄2 cup nonpareils or your favorite jimmies or other candy topping

Method

Heat your oven to 375ºF. Using your kitchen aid or hand beater in a large bowl, mix your butter, sugar, vanilla and eggs and cream the mixture together. Then add in your flour, salt & baking powder and mix slowly until everything is incorporated but don’t overwork the dough. Remove from stand mixer or your bowl and cover in plastic wrap and let the dough rest for about 30 minutes in the fridge so your cookies will retain their shape when you form and bake them.

Remove the dough from the fridge and shape the dough into 1oz dough balls and poke your thumb in the center of each dough ball and make a hole and shape into a ring. Dip each ring into your bowl of nonpareils and place onto lightly greased cookie sheet or baking pan in row. Bake at 375ºF for about 10-12minutes or until golden brown. Remove from heat and let cool and serve.
